These healthy oat-courgette-apple-peanut butter cookies are simple to make and packed with good ingredients. Perfect as a nutritious snack or breakfast cookie.

Ingredients

  • 1 egg (size M)
  • 70 g apple (I used a Jonagold apple)
  • 125 g courgette
  • 20 g MisterKitchens orange-raisin peanut butter
  • 50 g rolled oats (I used the oats from Lidl)
  • 65 g low-fat quark (I used the Linessa from Lidl)
  • 12 g raisins
  • (for extra flavour: flavoured drops, cinnamon, or other spices)

    1. Preheat the oven to 220°C. Dice the apple and courgette into very small pieces. Mix all the ingredients together in a bowl — you'll end up with a thick batter.2. Line a baking tray with baking paper. Divide the mixture into 8 portions and place them on the tray, shaping them however you like.3. Put the tray in the oven and bake the cookies for about 25 minutes until done. Let them cool slightly, then enjoy.
