Chicken Flautas

How to make Chicken Flautas

Ingredients
- 4 tbsp of olive oil
- 1 medium onion - chopped
- 2 cups shredded cooked chicken (I use rotisserie)
- 1 Anaheim pepper - chopped
- 6 mini colorful bell peppers - chopped
- 4 cloves of garlic - minced
- 1/2 bunch Cilantro - chopped
- 3 green onions - chopped
- 1 cup of Mexican shredded cheese blend
- 2 tbsp sour cream
- 1 can corn - drained
- 2 tbsp. Mexican table crema to drizzle on top
- 15 flour tortillas
- Salt, pepper, chilli powder
- Taco seasoning - I use Mom Cave Goods Taco Fiesta seasoning

In olive oil sauté onions, bell peppers, garlic. Season with salt, pepper, chilli powder and Taco seasoning. Add in chicken, corn, sour cream, Mexican cheese, cilantro and green onions. Give it a good mix and turn off the stove.

To assemble the Flautas, place chicken filling on the tortilla and roll it up tightly and place them on a baking sheet. Lightly spray with avocado oil spray.

Bake in the oven for 10-15 minutes at 450 F until golden and crispy.
