- 1/3 cup roasted carob powder
- 3/4 cup cane sugar (or granulated/brown sugar)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup hot water
- 1/3 cup sunflower oil (or any neutral vegetable oil)
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 2.65 oz (75 grams) vegan dark chocolate
- 1 teaspoon refined coconut oil

Combine dry ingredients: Preheat the oven to 350°F (180°C). In a bowl, mix dry ingredients.

Add wet ingredients: Stir in wet ingredients. Mix gently until just combined—don’t overmix.

Bake: Pour the batter into a lightly greased and floured 8-inch round baking pan. Bake for 30-32 minutes, or until a toothpick comes out clean.

Add topping: Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Melt the chocolate with coconut oil in a double boiler or microwave. Spread it over the cooled cake and dust it with carob powder, if desired.
