I love Overnight Oats with Frozen Fruit! It's my go-to breakfast because it's easy to make, healthy, and great for meal prep. Packed with frozen berries, chia seeds, and peanut butter this cold oatmeal recipe is refreshing, delicious, and incredibly filling. Plus, it's completely vegan, dairy-free, and gluten-free – no yogurt needed!

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup frozen fruit or mixed berries (do not thaw)
  • 1 tablespoon chia seeds
  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup (or your preferred sweetener)
  • 3/4 cup unsweetened almond milk (or any plant-based milk of choice)

Instructions

  1. 1

Mix & Chill: In a jar or airtight container, combine rolled oats, chia seeds, peanut butter, maple syrup, and frozen fruit (do not thaw). Pour in your plant-based milk and stir well. Cover and refrigerate for at least 4 hours, or overnight for creamier oats.

  2. 2

Top & Enjoy: In the morning, stir your oats and enjoy them with your favorite toppings. I love adding more frozen fruit, sliced bananas, and chopped nuts for extra texture and flavor.
