Homemade green burger on ciabatta bread

This homemade green burger is made from potato, fava beans and spinach and is served on sturdy bread with crisp lettuce and polderketchup. A delicious vegetarian meal that's quick to the table.
Ingredients
- 150 g potato
- 150 g fava beans, double-shelled
- 1 shallot
- 1 garlic clove
- 1/2 tsp ground cumin
- 100 g fresh spinach
- 1/2 beaten egg
- 20 g breadcrumbs
- 4 slices pain de campagne or other sturdy bread
- lollo rosso or other lettuce of your choice
- polderketchup
- 1 bunch coriander

Peel the potato and cut into small cubes. Cook together with the fava beans in salted water for about 5 min until tender. Drain and set aside.Heat oil in a frying pan, finely chop the shallot and garlic and sauté them briefly with the cumin powder, then add the spinach and let it wilt briefly.Take a cutting board, place the potato, fava beans and the spinach mixture on it. Chop the mixture finely with a cleaver.Make a well in the center, add the egg and the breadcrumbs and knead into a sticky mixture. Taste and add more salt if needed.Form 4 burgers and fry them until browned in a frying pan over medium heat.Toast the bread, top with lettuce, the burgers, ketchup and coriander.
