Fish on the BBQ: delicious cod parcels

These cod parcels are an easy and flavorful way to cook fish on the BBQ. With garlic oil, leek and lemon, you'll have a delicious dish on the table in no time.
Ingredients
- 2 cod fillets
- 1/2 leek
- 1/2 lemon
- 6 tbsp good olive oil
- freshly ground pepper & salt
- 1 garlic clove
- a handful of fresh parsley (I used flat-leaf)
Instructions
- 1
1. Start by making the garlic oil. Pour the olive oil into a small bowl, crush the garlic into it and add a good amount of freshly ground pepper and salt. 2. Pat the cod fillets dry with some kitchen paper and brush both sides with the oil. Wash the leek and slice it into rings. 3. Place two sheets of aluminum foil on top of each other (this makes the parcels a bit sturdier) and spread the leek over them. Put the cod fillets on top. 4. Finally, slice the lemon and place 3 slices on each cod. Now the papillotes (that's the official name) are ready for the BBQ.
