Raspberry Cheesecake Eggrolls
If you haven't noticed, I love finger food because it is such a fun way to eat. What could be more fun than stuffing eggrolls with cheesecake?! Crispy wonton wrappers filled with ingredients for a raspberry cheesecake make this dessert as delicious as they are entertaining!
Ingredients
- 1/2 cup(116 g) cream cheeseAmount1/2 cupIngredient(116 g) cream cheese, softened, softened
- 1/4 cup(33 g) powdered sugarAmount1/4 cupIngredient(33 g) powdered sugar

- 1graham cracker, crumbled
- 2 tbsp(40 g) raspberry preservesAmount2 tbspIngredient(40 g) raspberry preserves, plus more for serving., plus more for serving.

In a small bowl, combine the cream cheese, powdered sugarAmount1/4 cupIngredient(33 g) powdered sugar, and vanilla.

On a work surface, lay a eggroll wrapper down in a diamond shape. Scoop 2 tablespoons of the cream cheese mixture, ¼ of the graham cracker, and ½ tablespoon of the preserves into the middle of the wonton. Fold in the bottom, left, and right corners, gently pressing to remove any air bubbles. Using your finger, brush the top corner with water, and roll up to seal. Place it seam side down and repeat with the remaining eggrolls.

Preheat the air fryer to 320 degrees F (160 degrees C). Spray the air fryer with oil, add the eggrolls, spray with oil, and cook for 6-10 minutes, flipping halfway through.

Meanwhile, in a small bowl, scoop more raspberry preservesAmount2 tbspIngredient(40 g) raspberry preserves, plus more for serving. and microwave for 30-45 seconds until saucy. Serve the eggrolls with the raspberry sauce for dipping.
