Oatmeal Banana Bread

- 1 cup granulated white sugar
- 2 large eggs

- 1 cup mashed bananas, about 2 large ripe bananas
- 1 1/2 cups all-purpose flour
- 3/4 cup old fashioned oatmeal, plus optional 2 Tablespoons for topping
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup sour cream

Preheat the oven to 350°F (175°C). Prepare a 9-inch loaf pan by spraying it with baking spray and lining the bottom with parchment paper.

In a large mixing bowl, cream the softened butter and sugar together for several minutes until light and fluffy. Incorporate the eggs and vanilla extract and mix until well combined. Stir in the mashed bananas.
