  • 1 teaspoon vanilla extract
  • 1 pinch kosher salt
  • 1/2 teaspoon lemon zest, (optional, but recommended)
  • 2 cups (332 g) fresh strawberries, (sliced)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 large egg, (room temperature)
  • 1 tablespoon water
  • Confectioners’ sugar, (for dusting)
  • Strawberry Jam or Jelly, (for brushing)

    Preheat the oven to 400°F and line two baking sheets with parchment paper.

    On a floured surface, roll out the thawed puff pastry and cut into 12 rectangles, each about 4 ½ × 3 inches.
