Ingredients

  • 6 tablespoons (85g) unsalted butter
  • 1 and 1/2 cups (300g) granulated sugar
  • 1/2 cup (120ml) milk
  • 1/4 cup (21g) unsweetened cocoa powder
  • 2/3 cup (170g) creamy peanut butter
  • 1 tablespoon (15ml) pure vanilla extract
  • 3 cups (255g) old-fashioned rolled oats
  • 1/8 teaspoon salt

Instructions

  1. 1

In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Whisk constantly until the butter melts.

  2. 2

Bring the mixture to a boil, stirring occasionally. Once boiling, let it boil for 1 minute.

  3. 3

Remove from heat, stirring in the peanut butter and vanilla extract until well combined. Add the oats and salt, mixing thoroughly.

  4. 4

Let the mixture sit for 5 minutes to allow the oats to absorb some moisture.

  5. 5

Line two baking sheets with parchment paper or silicone mats and ensure there is room in the refrigerator.

  6. 6

With a tablespoon cookie scoop, drop spoonfuls of the dough onto the lined baking sheets, flattening slightly if desired.

  7. 7

Refrigerate for 30 to 60 minutes until set. Serve and enjoy!

  8. 8

Store leftover cookies covered in the refrigerator for up to 1 week.
