In a medium bowl, add 1 tbsp of oil, chipotle chili paste and pepper, and taco seasoningAmount2 tspIngredienttaco seasoning, stirring to combine. Add the chicken and toss to coat.

Preheat the oven to 450°F. In a skillet over medium-high heat, warm 1 tbsp of oil. Add the onions, stirring frequently, and cook until brown, about 20-25 minutes. Add the garlicAmount3Ingredientcloves garlic, minced and cook 1-2 minutes before removing from heat. Transfer to an 8x8 baking dish. Place the chicken on top of the onions and pour the remaining marinade on top. Bake for 35-45 minutes or until the chicken is cooked through and tender. Using two forks, shred the chicken and mix the onions and chicken together.

To assemble the quesadillas, lay 1 tortilla down, sprinkle half with 2 tablespoons cheese, a scoop of the chicken and onion mixture, 1-2 tablespoons of beans, 1-2 tablespoons of corn, and top with 2 more tablespoons of cheese. Fold in half and gently place in a warm skillet. Cook for 2-4 minutes, until golden and crisp on the bottom, then flip and cook 1-3 minutes more until golden.
