Ingredients

  • 1.25–1.5 lb sirloin, strip, or ribeye steak, trimmed and cut into 1-inch cubes
  • 10 oz cremini or button mushrooms, quartered
  • 3 tbsp unsalted butter, divided
  • 1–2 tbsp olive oil
  • 4 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 tbsp Worcestershire sauce or soy sauce (optional, for depth)
  • Fresh parsley, chopped
  • Lemon wedges, for finishing (optional)

Instructions

  1. 1

Pat the steak cubes very dry with paper towels. Toss with 1 tsp salt, 1/2 tsp pepper, and smoked paprika if using. Let them sit at room temperature for 10 minutes.

  2. 2

Heat a large heavy skillet (cast iron is best) over medium-high until hot. Add 1 tbsp oil and 1 tbsp butter.

  3. 3

Add mushrooms in a single layer. Don’t stir for 2–3 minutes to let them brown. Season with a pinch of salt and pepper, then cook another 3–4 minutes, stirring occasionally, until golden and tender. Transfer to a plate.

  4. 4

Add remaining oil if the pan looks dry. When shimmering, add half the steak bites in a single layer. Sear 1–2 minutes per side until browned with a crust and medium-rare inside. Transfer to the plate; repeat with remaining steak.

  5. 5

Lower heat to medium. Add remaining 2 tbsp butter to the empty pan. When melted and foamy, stir in garlic. Cook 30 seconds, just until fragrant.

  6. 6

Return mushrooms and steak (with any juices) to the pan. Add Worcestershire or soy if using. Toss 30–60 seconds to coat in garlic butter. Taste and adjust salt and pepper.

  7. 7

Finish with chopped parsley and a light squeeze of lemon. Serve hot.
