Minestrone Soup

Believe it or not, Minestrone soup has no set recipe! This Italian favorite was created by using up whatever you had on hand, and could be made with meat or entirely vegetarian. Minestrone's most common ingredients include beans, onions, celery, carrots, broth, tomatoes, and a starch, like rice or pasta. This is our favorite way to serve this traditional Italian dish, but don't be afraid to change it up and make it fun for everyone!

Instructions

    In a large pot over medium-high heat, melt the butter. Add in the onions, carrots, celery, and summer vegetables and cook for 5-7 minutes, or until the onions are translucent. Reduce heat to medium and add in the chicken brothAmount3Ingredient(14.5-ounce) cans chicken broth, beef broth, water, diced tomatoes, kidney beans, tomato paste, garlic, parsley, salt, basil, and pepper. Cook for 20 minutes, partially covered.

    Stir in the noodles, parmesan, and chickpeas, and cook for 20 minutes, or until the noodles are completely cooked through. Stir in the half & halfAmount1 cupIngredienthalf & half and spinach until just wilted, then serve.
