- 1 teaspoon lemon juice
- Pinch of salt
- 1 egg, beaten (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
- Optional glaze: 1/2 cup powdered sugar + 1–2 tablespoons milk + splash of vanilla

Prep the oven: Heat to 400°F (200°C). Line a baking sheet with parchment.

Cook the apples: In a small skillet over medium heat, melt 1 tablespoon butter. Add diced apple, brown sugar, cinnamon, nutmeg (if using), lemon juice, and a pinch of salt. Cook 3–5 minutes until softened and syrupy. Cool to room temperature.

Roll the pastry: Lightly flour your surface. Unfold puff pastry and roll it into roughly a 10x12-inch rectangle. Trim edges if needed for neat sides.

Butter and fill: Melt the remaining 1 tablespoon butter and brush it over the pastry. Spread the cooled apple mixture evenly over half the pastry, leaving a small border.
