Raspberry Ribbon Bars

In a medium bowl using a hand mixer, stir together the butter and sugar. Add the egg and vanilla, mixing thoroughly. In a small bowl, stir together the flour, baking powderAmount½ tspIngredientBaking Powder, salt, and almonds. Mix the flour mixture into the butter mixture until evenly combined. Divide the dough into three equal parts and wrap in plastic wrap. Refrigerate for about 1 hour, until firm.

Preheat oven to 350 degrees. Form one dough into a 10-inch long log and place it on a parchment-lined baking sheet. Press to flatten slightly and bake for 12-15 minutes, until the dough has dried but not browned. Using a spoon, make a well down the middle of the cookie and fill it with the jam filling. Place back in the oven and cook for 10 minutes more, until browned. Let cool for 15 minutes or more before slicing into bars.
