Birthday Cake Cookies
Easy birthday cake cookies are make with a funfetti cake mix and topped with a simple buttercream frosting.
Ingredients
- 1 box funfetti cake mix
- 2 teaspoons baking powder
- 2 tablespoons rainbow sprinkles
- 2 eggs
- 1/2 cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter (softened)
- 1/2 teaspoon vanilla extract
- 3 cups powdered sugar
- 2 tablespoons milk
- 2-3 drops red food coloring (or other color food coloring)
- rainbow sprinkles (for topping)

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.

In a medium mixing bowl with a whisk, combine the cake mix, baking powder, and sprinkles.

In a separate large mixing bowl, whisk together eggs, melted butter, and vanilla extract.

Stir in the dry cake mixture ingredients with the wet ingredients. Stir until dough forms.

Scoop 2 tablespoons of dough and roll to form a ball. Place 6 dough balls evenly spaced on each cookie sheet.
