Oven Baked Rice
A quick and easy flavorful side dish

Ingredients
- 2 tablespoons dry ranch seasoning
- 2 tablespoons water
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons vegetable oil
- 2 teaspoons toasted sesame oil
- 3 cups chilled cooked rice
- 1 cup shredded carrots
- 1 cup broccoli florets
- 1 egg, beaten
- 2 scallions, thinly sliced
- 1 teaspoon toasted sesame seeds
Instructions

In a large bowl, whisk seasoning, water, soy sauce, vegetable oil and sesame oil. Add rice, carrots and broccoli stirring well to evenly coat with ranch mixture.

Heat oven to 450F. Spread rice mixture evenly over a large baking sheet lined with parchment paper and bake on center rack for 15 minutes or until rice begins to brown.

Remove pan from oven and gently stir rice mixture around. Drizzle evenly with the egg and return to oven to bake for 5 minutes or until egg is cooked through.

Spoon onto a serving platter and sprinkle with scallions and sesame seeds.
