Yogurt and Saffron Stew

There are so many famous Persian dishes that contain saffron and this is one of the most delicious ones that comes originally from north of Iran. It is really healthy and delicious dish which can be served with saffron rice and the combination of these two is more than awesome!

Instructions

    Julienne cut the onions and broil them in a medium-size pan with olive oil. When the onions turn golden, add the chicken.

    Cut the chicken breast into square-off sizes and add them to the broiled onions.

    Add adequate spices except for the salt and saffron. Close the lid and let the mixture broil for 10-15 minutes.

    When the chicken turns golden, add water, salt, and saffron. Close the lid on medium heat and cook for 30-35 minutes.

    When the chicken is cooked properly with the rest of the mixture, open the lid and wait until only 1/4 of the added water is left in the pan. Then, add the yogurt to the mixture and leave it on low heat for 5-10 minutes.

    Optionally, you can add some roasted barberries or cranberries on top when serving to make it more beautiful.

    You can serve it with saffron rice as a complete Persian dish.
