Pecan Cookies
This is a tasty treat for breakfast, snacks or desserts. Try topping with powdered sugar to make it more attractive and to add to the already tasty, nutty flavor. Not overly sweet....just perfect,....somewhat crunchy texture with a great bite.
Ingredients
- 2 cups butter, softened
- 2 8 oz cream cheese, softened
- 2 tsps vanilla
- 4 cups flour
- 1/2 tsp salt
- 2 1/4 cups finely chopped pecans
- 1 1/3 cups sugar

In a large mixing bowl, cream butter & cream cheese until smooth

Beat in vanilla

Combine flour & salt; gradually add to creamed mixture

Divide into 3 equal portions

Wrap each in plastic wrap; refrigerate for 2 hours or until easy to handle

On a lightly floured service, roll each portion into a 16-in. x 9-in. rectangle

Combine pecans & sugar; sprinkle over dough to within 1/2 in. of edges

Use your rolling pin to slightly press pecan mixture into the dough

Roll up each rectangle tightly jelly-roll style, starting with a long side

Wrap in plastic wrap; refrigerate for 2 hours

Unwrap & cut dough into 3/8-in. slices

Place 2-in. apart on a lightly grease baking sheets or use parchment paper for easy removal of cookies

Bake at 400 degrees for 12 to 15 minutes or until lightly browned

Remove to wire racks to cool
