Pork Chops & Scallop Potatoes
This is a delicious main course that everyone will surely love and be back for more! The chops will come out moist and tender with the potatoes so very tasty!
Ingredients
- 3 tbsp butter
- 3 tbsp flour or cornstarch
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp french mustard powder
- 1 tsp truffle; parmesan cheese & black garlic powder
- 1 tsp garlic powder
- 1 14-1/2 oz chicken broth
- 4-6 (3/4 inch thick) pork rib or loin chops
- 2 tbsp canola oil
- additional salt & pepper to taste
- 6 cups thinly sliced peeled potaotes
- 1 med onion
- paprika & parsley to taste, optional

In small saucepan, melt butter; stir in flour or cornstarch, salt & pepper until smooth

Add broth & bring to a boil; Cook & stir for 1 minute or until thickened. Remove from the heat & set aside

In a large skillet, brown the pork chops on both sides in oil: sprinkle with additional salt & pepper if desired

In a greased 13 X 9-in baking dish, layer potatoes & onion

Pour broth mixture over layers

Place pork chops on top

Cover & bake at 350 degrees for 1 1/2 hours; uncover & bake for 30 minutes longer or until meat & potatoes are tender

Top with sweet paprika and parsley to make this dish look so amazing!
