Peach Galette

- 3-4 medium peaches, sliced (about 3 cups)
- 1 tablespoon granulated sugar
- 1 1/2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1 large egg, beaten
- 1 teaspoon turbinado sugar
- honey, optional, for serving
- vanilla ice cream, optional, for serving

Preheat the oven to 400°F and line a baking sheet with parchment paper.

Roll out the pie crust into a 14-inch circle, about ⅛-inch thick, and place it on the prepared baking sheet. Refrigerate while making the filling.

Combine the sliced peaches, granulated sugar, cornstarch, and cinnamon in a medium bowl, tossing to coat. Let sit for about 10 minutes to develop juices.

Remove the chilled pie crust and fill the center with the peach mixture, leaving a 2-inch border.
