How to make Thai Green Curry With Bamboo Shoot And Fried Tofu

Ingredients

  • 1 2-3Tbsp Maesri Thai green curry paste ( feel free to adjust your spicy level)
  • 2 2 Tbsp coconut oil
  • 3 1 can coconut milk
  • 4 400 ml water
  • 5 1 Tbsp palm sugar
  • 6 2 Tbsp fish sauce (use vegan fish sauce to make this vegan)
  • 7 1/2 bag of Asian Best bamboo shoot
  • 8 6 pieces of fried tofu
  • 9 basil leaves and chili peppers for final touch (optional)

    Put coconut oil and the green curry paste in a pot with medium high heat and sauté about 2 mins, until the curry fully releases its aroma.

    Add coconut milk, palm sugar, fish sauce and water into the paste, bring to a boil and let the sugar dissolve.

    Add chopped bamboo shoots and fried tofu and bring to a boil. Then lower the heat, and let it simmer for about 5 minutes so the flavors can come together.

    Garnish with basil leaves and chili pepper and you are ready to have this authentic Thai curry. Serve it hot with rice or noodles and enjoy!
