Double Chocolate Pizzelles

50 min

Light and chocolatey, these may be a little untraditional, but they are delicious. Cuisinart makes a Pizzelle Press that makes these super easy to make. Dust them with powdered sugar, or use them to make ice cream sandwiches.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 oz. very finely chopped bittersweet or semisweet chocolate

  • 1/2 cup unsalted butter, melted
  • 1 tablespoon vanilla
  • Confectioner’s sugar for dusting

Instructions

  1. 1

Preheat the pizzelle press on the medium setting. Using a pastry brush, brush a little melted butter on the top and bottom plates of the press.

  2. 2

In a small bowl, mix flour, cocoa, chopped chocolate and baking powder with a whisk to combine.

  3. 3

In a mixer or large bowl, add eggs and sugar and mix on medium speed for 1 minute until thickened.

  4. 4

On low speed, add the vanilla and melted butter in a steady stream and mix until just combined.

  5. 5

Add the flour mixture until just combined.
