Lemon and Sweet Basil Meltaway Cookies

A light and flakey cookie with hints of lemon and basil.

Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1-1/2 teaspoons lemon extract
  • 1-1/4 cups all-purpose flour
  • 1/2 cup Argo® Corn Starch
  • 1-1/2 teaspoons sweet basil
  • Frosting:
  • 1-1/2 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 1/4 teaspoon lemon extract
  • 2 drops yellow food color

Instructions

    Preheat oven to 350°F. Cream together butter and powdered sugar in a small mixer bowl until light and fluffy. Beat in lemon extract. Combine flour, corn starch and sweet basil in a separate bowl. Gradually add to creamed butter mixture and mix well. Shape dough into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Bake in a preheated 350°F for 10 to 12 minutes. Remove to wire racks to cool. Frosting: Mix the powdered sugar, milk, lemon extract and food coloring until smooth. Drizzle over cooled cookies. Store in an airtight container.
