A playful and healthier take on a backyard staple, these corn “ribs” transform sweet corn into a smoky, satisfying side.
📝 Ingredients
- 1 ears fresh corn
- 2 Tbsp. olive oil
- 1 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. cayenne pepper or chili powder
- Salt to taste
- 1 lime, cut into wedges
- 1 Tbsp. fresh parsley or cilantro
👨🍳 Instructions
- 1Preheat grill to medium-high heat.
- 2Husk corn and trim the ends. Carefully cut each ear in lengthwise into quarters, then in half, creating “ribs.”
- 3In a large bowl, toss corn ribs with olive oil, spices and salt.
- 4Grill corn ribs for 5-8 minutes until tender and lightly charred.
- 5Remove from grill and finish with a squeeze of lime juice and fresh herbs.
- 6Serve with a creamy sauce if desired.
