Ingredients

  • 1- inch piece of ginger (, peeled and grated)
  • 1 cup tomato puree
  • 1 tablespoon curry powder
  • 1 1/2 teaspoons paprika
  • 3/4 teaspoon kosher or fine sea salt
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 cups coconut milk
  • 1 teaspoon tamarind concentrate
  • 1 pound extra-large shrimp (, peeled and deveined)
  • Cooked basmati rice or cauliflower rice (, for serving)

Instructions

    Heat the coconut oil in a large skillet over medium-high heat. Add the onion and sauté until it is tender and translucent, about 3-4 minutes.
