Ingredients

  • 150 g plain flour
  • 150 g wholemeal flour
  • 90 g sugar
  • 45 g honey
  • 1 egg
  • 350 ml buttermilk
  • 1 tsp vanilla extract
  • 150 g banana, peeled
  • 45 g oats
  • 45 g chocolate chips
  • 10 g baking powder

Instructions

    Preheat the oven to 170 ̊C.

    Mix the flour, baking powder and sugar in a bowl.

    In a separate bowl, mix the honey, egg, buttermilk and vanilla until combined.

    Pour the wet ingredients into the dry ingredients and mix until just combined.

    Crush the peeled banana with a fork.

    Stir the banana, chocolate and oats through the mix.

    Divide into 12 muffin cups, then place in the oven for 25 minutes or until cooked through.
