Peppercorn Beef Top Loin Roast

Ingredients
- 3 lb beef top loin roast
- 2 tablespoons mixed peppercorns, coarsely crushed
- 2 teaspoons kosher salt
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon freshly ground black pepper

Preheat the oven to 450°F (232°C). Pat the beef top loin roast dry with paper towels.

Rub the roast all over with olive oil, then coat with Dijon mustard.

Combine crushed peppercorns, kosher salt, minced garlic, rosemary, and black pepper in a bowl. Press the mixture evenly over the roast.

Place the roast on a rack in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce temperature to 325°F (163°C) and continue roasting for 55 minutes, or until desired doneness.
