Pumpkin Protein Overnight Oatmeal

A high protein pumpkin recipe that you can wake up to on a cool Fall morning.

Ingredients

  • 1 cup steel cut oatmeal
  • 1 pouch Manitoba Hemp Hearts (Optional but this is the secret ingredient that adds more protein to the recipe!)
  • 1 15 oz can can pumpkin puree
  • 2 cups unsweetened almond milk (can substitute skim or coconut milk)
  • 1/4 cup sugar (or sweetener of choice)
  • 1/4 cup pure maple syrup
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 sprinkle cinnamon (optional)

Instructions

    Add all ingredients, except cinnamon, to crockpot

    Stir ingredients in crockpot

  3. 3

    Turn on crockpot to low heat and cook for 8-9 hours.

    Stir before serving warm. Add sprinkle of cinnamon to top of oatmeal if desired.
