Cottage Cheese, Ground Beef and Sweet Potato Casserole

- 1 lb (450 g) ground beef
- 2 large sweet potatoes, peeled and thinly sliced
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat your oven to 375°F (190°C). Grease a 9x13 inch (23x33 cm) baking dish.

In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened, about 3 minutes.

Add ground beef to the skillet and cook until browned. Season with thyme, salt, and black pepper. Remove from heat.

Layer half of the sweet potato slices on the bottom of the prepared baking dish. Spoon the ground beef mixture over the sweet potatoes.

Spread cottage cheese evenly over the beef layer. Top with remaining sweet potato slices and sprinkle cheddar cheese over the top.

Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes, or until sweet potatoes are tender and cheese is golden. Let sit 10 minutes before serving.
