Apple Cider Sage Pork Chops

- 4 boneless pork chops (about 1-inch thick)
- 1 cup apple cider
- 1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon unsalted butter
- Salt and black pepper to taste
