Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk ((see notes))
  • 1/4 cup oil ((or melted butter))
  • 2 large eggs
  • 1 teaspoon vanilla extract

    Begin preheating your waffle iron.

    To a large bowl, add the flour, sugar, baking powder, baking soda, and salt. Mix.

    To a medium bowl, add the buttermilk, oil, eggs, and vanilla extract. Whisk until smooth.

    Pour the wet ingredients into the dry ingredients and whisk until JUST combined. Do not overmix. It's okay if the batter is lumpy.

    Spray the waffle iron with oil. Scoop about ½-1 cup of batter into the center. Close the waffle iron and cook until golden brown. Remove the waffle and repeat with the rest of the batter.
