Mashed Sweet Potatoes

These mashed sweet potatoes are easy to make and naturally sweet. A drizzle of maple syrup takes them to the next level.

Ingredients

  • 3 pounds sweet potatoes ((about 6 medium))
  • 2 tablespoons salt
  • 1/2 cup softened butter ((cubed))
  • 1/2-3/4 cup warm milk
  • 1/4-1/2 cup maple syrup ((to taste))

Instructions

    Peel and chop the sweet potatoes into 1-inch cubes. Transfer to a large pot. Add salt and enough cold water to cover the sweet potatoes by about 1 inch.

    Bring to a boil, then reduce to a simmer, and cook for 15-20 minutes until soft and tender. Drain and transfer to a large bowl.

    Mash the potatoes with a potato masher.

    Add the butter and gently fold until melted.

    Stir in 1/2 cup of milk, then add up to 1/4 cup more to reach your desired consistency.

    Stir in 1/4 cup of maple syrup, taste, and add more as needed. Enjoy!
