Twice Baked Potatoes

These Twice Baked Potatoes are loaded with sour cream, bacon, cheddar cheese, and green onions. Perfect as a side dish for any meal, or as a main course.
Ingredients
- 4 large Russet potatoes
- 1 cup sour cream
- 1/2 cup milk
- 4 tablespoons melted butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese ((divided))
- 8 green onions ((sliced; divided))
- 4 slices bacon ((crumbled))

Preheat your oven to 425°F.

Bake the potatoes directly on the oven rack for about 1 hour until tender. Let them cool so you can handle them.

Cut the cooled potatoes in half lengthwise and scoop the insides into a bowl. Place the skins on a baking sheet.

Add sour cream, milk, butter, salt, pepper, ½ cup cheese, and half of the green onions to the bowl. Mash with a potato masher and then mix until combined (do not overmix, otherwise they will get a gummy texture).

Spoon the mixture back into the potato skins. Sprinkle the tops with the remaining cheese and crispy bacon.

Bake for 15 minutes until the cheese melts. Top with green onions and serve hot. Enjoy!
