- 1 tablespoon ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1/4 cup dark brown sugar, (firmly packed)
- 1 tablespoon chili powder
- 1/2-1 teaspoon cayenne pepper
- 2 tablespoons smoked paprika
- 2 tablespoons cumin
- 1 whole 8-12-pound pork butt, (bone-in and skinless (or pork shoulder))
