Fluffy Blueberry Pancakes
These blueberry pancakes are perfect for your next breakfast. Made with fresh or frozen blueberries, they are soft, fluffy, juicy, and super easy to make.
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/3 cups milk
- 1 large egg
- 1/4 cup melted butter ((or oil))
- 2 teaspoons vanilla extract
- 1 cup blueberries ((fresh or frozen))

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until JUST combined (some lumps in the batter are okay). If using fresh blueberries, gently fold them into the batter.

Heat a greased skillet over medium-high heat. Pour ⅓ cup of batter onto the skillet. If using frozen berries, sprinkle them evenly onto each pancake immediately after pouring the batter. Cook for 2 minutes, or until bubbles begin to form on the surface. Flip and cook for another 1-2 minutes, until golden brown.
