  • 3/4 cup (150 g) packed brown sugar
  • 1/2 cup (120 ml) neutral oil (vegetable or refined coconut)
  • 1/2 cup (120 g) unsweetened applesauce
  • 1/2 cup (120 ml) unsweetened plant-based milk
  • 1 tsp vanilla extract
  • 2 cups (200 g) freshly grated carrots (about 3 medium carrots)
  • 1/2 cup (80 g) crushed pineapple, well drained
  • 1/2 cup (60 g) chopped walnuts or pecans (optional)
  • 8 oz (225 g) vegan cream cheese, cool room temperature
  • 1/4 cup (55 g) vegan butter, softened
  • 2 cups (240 g) powdered sugar
  • 1 tsp vanilla extract

    Preheat and prepare the pans: Heat oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
