Cheddar Turkey Melt

A buttery, golden sandwich loaded with sharp cheddar and savory turkey breast, grilled in a skillet in about 15 minutes.
Ingredients
- 4 slices sourdough bread (about 1/2 inch thick)
- 8 oz (225 g) sliced deli turkey breast
- 4 slices sharp cheddar cheese
- 2 tablespoons unsalted butter, softened
- 1 tablespoon mayonnaise
- 2 teaspoons Dijon mustard
- 2 thin slices tomato (optional)
- Salt and black pepper to taste

Prep the bread: Spread softened butter evenly on one side of each bread slice. On the unbuttered sides, spread mayonnaise on two slices and Dijon mustard on the other two.

Build the sandwiches: On the mustard side of two bread slices, layer the turkey and one slice of cheddar each. Add tomato slices if using. Close each sandwich with the mayo side facing inward.

Grill the first side: Place the sandwiches butter-side down in a dry skillet over medium heat. Cook 3 to 4 minutes until the bottom is deep golden and sounds crisp when tapped.

Flip and melt the cheese: Flip the sandwiches carefully. Cover the pan loosely with a lid and cook another 3 to 4 minutes until the second side is golden and the cheddar is fully melted. Cut diagonally and serve immediately.
