Yán Jū Jī - 盐焗鸡salted fried chicken Ingredients:1 heavy chicken1 tsp salt1 tsp Shā Jiāng/沙姜 or Shān Nài/山奈 (type of ginger)1/2 tsp white pepper1/4 tsp kunyit3 spring onions6 cm jahe2 tbsp oil Ingredients sauce:1 spring onion1 tsp ginger paste Preparation:Mix the salt with the Shā Jiāng, the pepper, the kunyit and the oil. Rub the chicken in with this (inside and outside) and let it marinate for at least 4 hours. Cut the spring onion into pieces and the jahe into thin slices. Stuff the chicken with this. Place the chicken in a pan and cover it with the lid. Then bake the chicken in an oven at 180gr for 1 hour. Then let it rest covered for 30 minutes. Then cut the chicken into pieces and serve it with the sauce. Preparation sauce:Finely chop the spring onion. Mix this with the ginger paste and 3 tbsp of the chicken stock.
