Adobo sa Gatapork stewed in a spicy sauceIngredients:1400 gr pork shoulder1 onion1 bulb of garlic1 tsp peppercorns2 bay leaves225 ml of water125 ml vinegar125 ml soy sauce240 ml coconut milk3 red lombokssalt to taste1 tbsp oilPreparation:Cut the meat into large cubes. Finely chop the onion and chop the garlic. Cut the lomboks into thin rings.Heat the meat in a pan together with the onion, garlic, peppercorns, bay leaf, water, vinegar and soy sauce and bring to the boil. Skim the foam/scum from the pan. Then let it simmer on low heat and covered for 30 minutes until the meat is tender.Drain and reserve 240 ml of the stock and the solids. Heat the oil in a pan and add the meat and solid parts and fry the meat until brown on all sides. Then add the stock, coconut milk and lomboks and bring to the boil while stirring. Then simmer over low heat and covered for 15 minutes until the meat is done and the sauce has thickened. Sprinkle the salt over it and serve.
