Ingredients

  • 1/2 Cup sunflower oil
  • 1/2 Cup vinegar
  • 1/4 Cup maple syrup
  • 1 tsp mustard powder
  • 1 tsp salt
  • 1 Tbsp. celery seed
  • 1/2 large head of cabbage (grated)
  • 1 small red onion (thinly sliced rings)
  • 1 small yellow onion (thinly sliced rings)
  • 3 large carrots (grated)
  • 1 large red bell pepper (chopped thin)
  • 1/4 Cup parsley (chopped thin)

    In medium – large saucepan: mix oil, vinegar, maple syrup, mustard powder, celery seed, salt, and pepper. Bring to a boil.

    Allow to simmer for just a few minutes.

    Remove from heat and allow to cool in refrigerator for a few hours.

    Grate the cabbage with a veggie grater, slice and chop veggies. Place in large bowl and mix with dressing.

    Allow to chill for a few hours before serving.
