  • 4 ham steaks (5 oz each)
  • 1/2 cup sliced red pepper
  • 1/2 cup sliced green pepper
  • 1 cup fresh pineapple (chopped)
  • 2 cups yams (cooked and mashed or 1lb canned)
  • 1/2 cup chicken brothj
  • 2 tsp soy sauce
  • 2 tsp lemon zest
  • 2 tsp orange zest
  • 2 tsp ginger (minced or 1/2 tsp ground ginger)
  • 3/4 tsp curry powder
  • 2 Tablespoons slivered almonds (optional)

👨‍🍳 Instructions

  1. 1Preheat oven to 400F
  2. 2Prepare 9 x 13 baking dish
  3. 3Mix peppers, pineapple, soy sauce, chicken broth, lemon zest, orange zest, ginger, and curry
