Ingredients

  • 1 green apple, cored and chopped
  • 1 cup fresh spinach
  • 3/4 cup plain kefir
  • 1/4 cup cold water
  • 4 ice cubes

Instructions

  1. 1

Add the kefir and water to the blender first, then the spinach, apple, and ice. Blend on high for about a minute, until the spinach is fully broken down and no green flecks remain floating on top.

  2. 2

This green smoothie swaps in kefir for the water or milk you'd normally use, which is a different move than our peach kefir recipe — here kefir is replacing plain liquid rather than a yogurt-milk blend, so the protein and probiotic boost is even more noticeable relative to a standard green smoothie.

  3. 3

Leave the apple peel on for more fiber and a slightly more tart flavor, or peel it if you prefer a milder, sweeter smoothie. Either way, chop the apple into small pieces first so your blender doesn't have to work as hard.
