Beef or chicken liver pate with bacon

Ingredients

  • Beef Liver Pate Ingredients: 1/2 pound of grass-fed beef liver
  • 1/4 cup of grass-fed butter
  • 2 tablespoons raw heavy cream salt
  • (Non-Carnivore Add-Ins) 2 teaspoons minced garlic
  • 1 tablespoon lemon juice 1/2 teaspoon of organic allspice
  • Chicken Liver Pate Ingredients: 1 pound of chicken livers
  • 1/4 cup of grass-fed butter salt
  • (Non-Carnivore Add-ins) small onion 1 garlic clove
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon thyme

Instructions

    Sauté chicken livers in 2 tbsp of grass fed butter until cooked (about 2 minutes). Set aside.

    Cook onion and garlic and set aside to cool: Cook onions and garlic plus additional butter in the same pan (skip this step if doing full carnnivore). Add to livers and cool.

    Add seasonings and blend until smooth.: Add the herbs and blend in a food processor until smooth.

    Refrigerate overnight.: Tightly cover with plastic wrap (press down to remove all air) and refrigerate overnight

    Soak beef liver in brine: For Beef liver, create a salt water brine and soak beef liver for 30 minutes in fridge.

    Sauté beef liver: Cut liver into small pieces and sauté with 2 tbsp of butter until fully cooked (add garlic if not doing full carnivore).

    Blend with food processor.: Once cool, blend with spices using a food processor until smooth. Once smooth add lemon juice and cream blend a touch more.

    Cover and refrigerate.: Tightly cover with plastic wrap (press down to remove all air) and refrigerate overnight.

    Serve chilled.
