This authentic Greek pita bread recipe is so easy to make. Soft and chewy pitas that are great to make ahead and are so versatile to use.
📝 Ingredients
- 1 cup water
- 2 1/4 tsp active dry yeast (1 packet)
- 2 tsp granulated sugar
- 2 1/2 cups all-purpose flour, divided
- 1 tsp kosher salt
- 1 1/2 Tbsp olive oil
- 3 Tbsp whole wheat flour
👨🍳 Instructions
- 1In a bowl, combine water, yeast, sugar and 1 cup all-purpose flour.
- 2Allow the mixture to sit for 10 minutes, until it bubbles.
- 3Add salt, olive oil, whole wheat flour and remaining all-purpose flour.
- 4Knead the dough for 5 minutes, until smooth.
- 5Add to a bowl lightly greased with oil, cover, and let rise for 1 hour.
- 6Divide into 8 parts and shape into balls, rest for another 15 minutes.
- 7Lightly dust a clean surface with flour. Take one ball and roll it out into a 7-inch disk with a rolling pin or gently with your hands.
- 8Grease a large skillet with olive oil and spread it evenly with a pastry brush. Heat the skillet over medium-high heat.
- 9Place a rolled-out disk onto the pan and cook for 1 minute. Gently flip to cook another side for 1 minute, until the pita starts bubbling. Flip again and cook for 30 more seconds. Remove once cooked onto a clean kitchen towel and cover to prevent pitas from drying out.
- 10Continue with remaining dough, greasing skillet as needed.
