Vegan White Bean Stew

This Vegan White Bean Stew is made in just one pot in under half an hour with basic ingredients and canned beans. Vegan & Gluten-Free.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 4 cloves garlic
- 2 carrots
- 2 celery stalks
- 1 tsp salt
- Black pepper to taste
- 1 tsp thyme
- 2 potatoes
- 480 grams white beans (2 cans, drained)
- 5 cups vegetable stock
- 70 grams baby spinach
- 400 milliliter light coconut milk (1 can)
