Wholemeal Waffles Recipe

Wholemeal fruity waffles, piled high with fruit - low on fat and refined sugar and high in fibre and yumminess.
Ingredients
- 3 medium free range eggs
- 420 ml whole milk
- 125 g salted butter (melted)
- 1 tsp vanilla extract
- 100 g self-raising white flour (self rising flour)
- 200 g wholemeal self-raising flour (self rising flour)
- 55 g white caster sugar (superfine sugar)
Instructions
- 1
Preheat your waffle iron.
- 2
Whisk the eggs, milk, melted butter and vanilla together in a bowl or jug.
- 3
In a second bowl, mix the flour and sugar.
- 4
Make a well in the flour mixture and pour the milk mixture into it.
- 5
Using your whisk, gradually incorporate flour into the milky mixture until you have a smooth batter.
- 6
Spoon a small ladleful of batter into the waffle maker. The batter will give 8 waffles in a standard waffle maker. Don't overfill your waffle iron as the batter will expand considerably as it cooks.
- 7
Cook for 3-5 minutes, depending on how well done you like your waffles.
