Zucchini Spread (Ikra) Recipe

Easy classic Russian zucchini spread (ikra) is a simple spread made with grated and sauteed zucchini, carrots and other vegetables in a tomato garlic paste.

Ingredients

  • 2 medium zucchini, grated (about 1 1/2 lbs)
  • 2 medium carrots, grated
  • 1 large sweet onion, finely chopped
  • 2 large tomatoes, grated
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp granulated sugar
  • 1/4 tsp ground black pepper
  • 4 Tbsp canola oil
  • herbs to taste, optional

Instructions

    Grate zucchini. Grate carrots and tomato and finely chop the onion.

    In a deep skillet (or Dutch oven), heat oil on medium/high heat. Add carrots and onion, saute 5 minutes, stirring frequently.

    Add grated zucchini. Saute 15-20 minutes, stirring frequently (until all the excess liquid is gone) and zucchini is tender.

    Add grated tomato, garlic salt, sugar, and pepper. Stir everything, turn the heat down to low and let simmer another 5 minutes. Mix in the fresh herbs and enjoy!
