  • 2 tablespoonscooking oil
  • 2 mediumonions
  • 1/2 teaspoonmustard seeds
  • 1/2 teaspoonwhole cumin seeds
  • 1/4 teaspoonred chilli powder
  • 1/4 teaspoonsalt
  • 1/4 cup (60 ml)water
  • 2 sprigsfresh curry leaves

Instructions

  1. 1

    Mix the filling

In a bowl, combine the gram flour, salt to taste, red chilli powder, ground cumin, garam masala or sambar powder, lemon juice, tamarind purée and 2 tablespoons of water. Stir everything into a thick paste.

  2. 2

    Prepare the okra

Trim both ends of each okra pod. Make one lengthways slit down each pod, without cutting all the way through.

  3. 3

    Stuff the pods

Use your hands to fill each slit okra pod with the masala paste.

  4. 4

    Heat the pan

For the hob method, place a frying pan over a medium heat and add 2 tablespoons of oil. Carefully arrange the stuffed okra in the pan and sprinkle over 1 tablespoon of water, then cover with a lid.

  5. 5

    Steam and turn

Cook covered for 5 minutes. Lift the lid, turn each pod over, cover again and cook for 5 more minutes.

  6. 6

    Finish the dry curry

Turn off the heat and garnish the cooked okra with chopped coriander leaves.

  7. 7

    Arrange in air fryer

For the air-fryer method, spray or brush the air-fryer mesh with cooking oil. Carefully place the stuffed okra on the mesh.

  8. 8

    Air-fry the okra

Spray or brush each pod with cooking oil. Close the air fryer and cook for 10 minutes at 200°C (390°F).

  9. 9

    Prepare the gravy base

For the gravy, heat a frying pan over a medium heat and add 2 tablespoons of oil. Add the mustard seeds and whole cumin seeds; when they begin to splutter, add the curry leaves and sliced onions. Sauté until the onions turn translucent.

  10. 10

    Add the seasonings

Add any remaining masala stuffing, the 1/4 cup of water, the 1/4 teaspoon of salt and the 1/4 teaspoon of red chilli powder. Mix well, then immediately add all the cooked stuffed okra.

  11. 11

    Simmer the gravy

Cover the pan and cook over a low heat for 3–4 minutes. Remove the lid and let the mixture come together, then turn off the heat and garnish with chopped coriander leaves.

What is bharwa bhindi?

Bharwa bhindi means stuffed okra: the pods are slit and filled with a seasoned mixture before being cooked. It is a familiar preparation across Indian home cooking, with regional versions varying in their spices and whether they are served dry or with gravy.

This version uses gram flour, tamarind, lemon and a choice of garam masala or sambar powder for a tangy, warmly spiced filling. The same stuffed okra can be served straight from the pan or air fryer, or simmered in an onion-based gravy.

The gram flour, onions and okra provide most of the carbohydrates, while the cooking oil contributes most of the fat; the gram flour supplies some protein. Serve a moderate amount with dal or another protein-rich dish and vegetables to make a more balanced plate.

The filling and spice choices

Gram flour: it gives the filling body and helps it stay inside the slit pods. Add the water gradually so the mixture is thick enough to stuff rather than runny.

Tamarind and lemon: both bring acidity to the masala, while cumin and turmeric provide earthy warmth. Choose garam masala for a rounded spice blend or sambar powder for a different, south Indian-style seasoning.

Prepare the okra carefully

Dry pods: wash the okra and dry it well before trimming and slitting; damp okra can feel sticky and be harder to handle. Keep the cut shallow enough that each pod stays in one piece.

Even filling: use your fingers to press the paste into the slit without forcing the pod apart. A little paste on the outside is fine, but leave enough room for the okra to hold its shape.

Cooking on the hob

Covered cooking: the small splash of water creates steam, helping the pods cook through while the filling sets. Keep the heat at medium and turn the okra gently after the first 5 minutes.

Doneness: the pods should be tender when pierced and the filling should look cooked rather than wet. If the pan dries out before the okra is tender, add a small splash of water and cover it again.

Using the air fryer

Arrange the stuffed pods on an oiled mesh in a single layer, then brush or spray them with oil as directed. Air-fry at 200°C for 10 minutes; the precise finish can vary with pod size and appliance, so check that they are tender.

The air-fryer method makes the dry version without the covered steaming stage used on the hob. Handle the pods carefully when removing them, as the filling can loosen.

Turning it into gravy

Onions and tempering: let the mustard and cumin seeds splutter in hot oil, then sauté the curry leaves and sliced onions until translucent. This makes the aromatic base for the gravy.

Cooked okra: stir in the remaining filling, water and seasonings before adding the already-cooked stuffed pods. A short covered simmer of 3–4 minutes brings the flavours together without requiring another long cook.

Serving ideas

Serve the dry bharwa bhindi alongside rice or flatbreads, with dal or another simple curry if you want a fuller meal. The gravy version can be spooned over rice or served with chapati.

A plain yoghurt side or a fresh salad can add a cool contrast to the tangy, spiced filling. Add the coriander garnish just before serving for a fresh finish.

Recipe notes & tips

  • Dry the okra thoroughly before cutting so it is easier to slit and stuff.
  • Keep the filling thick; add only enough water to make a paste.
  • Slit each pod along one side without cutting it in half.
  • Turn the pods gently so the stuffing stays in place.
  • Use a single layer in the air fryer for more even cooking.
  • Reserve chopped coriander for garnishing the finished dish.

Variations

  • Choose sambar powder: use it instead of garam masala for a different south Indian-style spice note.
  • Make it tangier: adjust the tamarind and lemon in the filling to suit your taste.
  • Serve it dry: finish the hob or air-fryer okra with coriander and skip the gravy stage.
  • Make the gravy: prepare the onion tempering and briefly simmer the cooked okra in it.
  • Adjust the chilli: use less or more red chilli powder to suit your preference.

Common mistakes to avoid

  • Wet okra: it can be sticky to handle, so dry the pods well before preparing them.
  • Thin filling: it may run out of the slits; mix in enough gram flour to keep the paste thick.
  • Deep slits: the pods can split apart, so cut only along one side and leave them intact.
  • Rough turning: the filling may fall out; turn each pod gently with a utensil.
  • Crowded air-fryer mesh: the pods may cook unevenly, so leave space between them.
  • Overcooked gravy stage: the okra can lose its shape; keep the final simmer to 3–4 minutes.

How to store

Refrigerate leftovers in a covered container and use within 3 days. Reheat gently in a covered pan or in the microwave until hot throughout; add a splash of water if the gravy has thickened.

Frequently asked questions

Can I make this without an air fryer?

Yes. Use the hob method: cook the stuffed pods covered in a frying pan for 5 minutes, turn them, then cook covered for 5 more minutes.

Can I use garam masala or sambar powder?

The recipe lists either option for the filling. Choose the one whose flavour you prefer.

How do I know the okra is cooked?

It should be tender when pierced, and the gram-flour filling should no longer look raw or wet. Check after the stated cooking time, as pod size and appliance performance can differ.

Can I make the gravy with air-fried okra?

Yes. Cook the stuffed okra in the air fryer first, then add it to the onion and spice base and follow the gravy simmering step.

Why is my okra sticky?

Okra can release a sticky texture, especially when it is damp or cut more than needed. Dry it thoroughly and keep the slit to one side of each pod.

What can I serve with bharwa bhindi?

Serve it with rice or flatbreads. Dal, yoghurt or a fresh salad also work well alongside it.
