Homemade Fudgesicles

These easy Homemade Fudgesicles are a great way to enjoy creamy chocolate popsicles any time of the year!
Ingredients
- 1 cup heavy cream ((250 grams) double cream)
- 1 cup whole milk ((250 grams))
- 2 tablespoons cornstarch
- 3 tablespoons brown sugar
- 3 tablespoons white sugar
- 3 tablespoons unsweetened cocoa powder
- 3 ounces dark chocolate ((chips or chopped) (80 grams))
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt

Heat the milk and cream together over a medium/low heat until hot (but don’t allow it to boil).

Slurry: Add 2 tablespoons of the warm milk mixture to a small dish and stir in the cornstarch to create a thick ‘slurry’, then pour it into the pan of milk.

Heat: Pour in the sugar, cocoa powder, chocolate, vanilla and salt. Heat gently, stirring, for a few minutes until the chocolate melts and the mixture thickens slightly.

Cool: Remove the pan from the heat and let the fudgesicle mixture cool.

Freeze: Whisk the mixture briefly, then pour into popsicle molds and freeze for at least 4 hours until solid.
